Varieties of bread from the Balearic Islands

Specialties

Among the varieties of pan de payés (peasants bread) are white bread and brown bread. They also make beer bread, sliced bread, savory breadsticks, magranetas, and Vienna bread, among others.

 

One of their specialties is ensaimadas, which come in different sizes. They make them plain or filled with black seed squash jam, cream, burnt cream, apricots, tallades, figs, and sobrasada.

 

Also noteworthy are rubiols, sweet orange cocas, milk, and quarter cocas, as well as apple, apricot, and fresh cheese tarts with berries.

 

As for traditional savory pastries, they have panades, cocarrois, vegetable cocas, and trempó.

 

They offer typical products that are consumed in Mallorca during each holiday or season, such as ensaimadas and sweet tallades cakes for Carnival, panades for Easter, rosarios for All Saints’ Day, and at Christmas, potato or anise cakes, egg yolk nougat and wafer nougat (coca de turrón) and marzipan bread (bread from Cadiz). They also make polvorones and a “Christmas Cake” using a recipe provided by an English friend
