Varieties of bread from the Balearic Islands
Specialties
They prepare traditional Mallorcan salt-free white and brown bread, as Mallorcan bread does not traditionally contain salt. They also make special breads, such as rye bread, white seed bread, brown seed bread and wholemeal bread (these do contain salt). You can find large loaves made with llonguet dough, rustic rolls and wholemeal rolls.
Among the savoury products they make, we must highlight the coca de trempó, vegetable and pepper. They have also recently added a vegetable coca with musola.
The most popular empanadas (pies) among their customers are the meat and pea empanadas with onion and sobrasada. They also make other varieties such as chicken and pea empanadas with onion and sobrasada, tuna empanadas with peas, roasted peppers and onion, and others with just meat and sobrasada or peas with onion and sobrasada. The latest addition introduced by the fourth generation is cuttlefish empanadas. As the dough contains squid ink, it is black in colour and the filling is cuttlefish, peas, onion and sobrasada.
They have also added pizza to their range, even though it is not a Mallorcan product. The dough is the same as the savoury cocas and is topped with tomato, sweet ham and cheese.
Their star savoury product is the cocarroi, filled with chard, cabbage, cauliflower, parsley, raisins, onion, olive oil and lard.
Among the wide variety of traditional sweet pastries are rubiols, cremadillos, palmeras, crespells, etc., as well as sweet sobrasada coca, cream, puff pastry with cream, fruit and apricots. They have a wide selection of cakes that vary with the seasons.
However, their star sweet product has always been peach cake and, when in season, apricot cake.
Also worth mentioning is the wide variety of ensaimadas they prepare: cream, crema quemada (burnt cream), cream and chocolate, truffle, angel hair, cream with strawberries, chocolate (with or without walnuts), white chocolate (with or without walnuts), apricot, apricot with sobrasada and sobrasada with pumpkin. But their star ensaimada is the burnt cream and the individual ensaimada with cream.
They also make angel hair, chocolate and sobrasada roscones.
