Varieties of bread from the Balearic Islands
Specialties
Among the varieties of peasant’s´ bread (pan de payés), they make are white bread, brown bread and wholemeal bread, as well as xeixa bread, pumpkin seed bread, sunflower seed bread and oat bread.
As for savoury pastries, their specialities include vegetable, red pepper and trempó cocas, as well as empanadas (panades) that filled with meat, meat with peas, chicken or cuttlefish, and vegetable cocarrois.
In terms of sweet pastries, they make apricot cocas, almond gató, quarter dough cocas, cream, cream or truffle sticks, bambes or Christmas cocas, black seed squash jam cremadillos, cream and chocolate, as well as crespellets.
Another of their specialities is ensaimadas. They come with a wide variety of fillings: burnt cream, cream, chocolate, white chocolate, white chocolate with hazelnuts, apricot, apple, pistachio, black seed squash jam and sobrasada, among others, as well as the traditional plain ensaimadas.
They also offer traditional Mallorcan products that are made for each holiday or season, such as roscones de Reyes (Three Kings’ cake), espinagades for Sant Antoni, ensaimadas de tallades for Carnival, rubiols for Easter, panellets and buñuelos (both filled cream with and hole types) for All Saints’ Day and the Virgins, and turrón, amargos and mantecados for Christmas.

Siblings Apol·lònia and Pere Terrasa represent the third generation of the family currently running the bakery.
They still use the wood-fired oven to bake their products.
They have also won several awards: at the 2014 Ensaimada Fair and the 2017 Llonguet Fair, where they won first prize in the sandwich competition with a filling of suckling pig with tender shoots and caramelised onion.
They have a space for tasting their products in their establishments in Cala d’Or and Santanyí.
