‘If you like the job, there are few disadvantages,’ this is what Exequiel Cagliolo thinks, a vocational cooking student who took part in one of the talks organised by ADR Balears through the Pa d’aquí, forn y tradició project.
The students were visited by Catalina and Xavier Amer, from the Forn Ca N’Amer in Sant Llorenç des Cardassar and Pastisseria Ramis in Manacor, with the aim of learning about the importance of the baker and to find possible successors within the sector, a rather complex task nowadays due to the lack of labour.
The Amer brothers shared their experience of taking over the family oven after their parents retired. In addition, they offered practical advice on running a bakery to the students present. Their Kinder chocolate ensaimada was the final star, delighting all the young people who tried it.
The students gave their point of view on the profession, highlighting the importance of the vocation and defending traditional bakeries against large stores. One of them expressed that “there are many ovens that produce products in a traditional way.” This is a fundamental aspect that the Amer brothers have also emphasised.
